Want to beat the sweltering heat of summer? If so, try this cool refreshing fruit and veggie salad recipe.  This quick and easy salad, pairs well with your favorite salsa and picante sauces. Delicious and light, it is a great item to snack on while enjoying time with friends and family. 

 

Jicama Cucumber Summer Salad – Ensalada Fresca

Ingredients:

1 large jicama peeled

1 cucumber peeled

1 pineapple, peeled and cored

1 green or ripe mango

¼ cup fresh lime juice

¼ cup orange sauce

¼ teaspoon ground cayenne

¼ teaspoon paprika powder

½ teaspoon coarse sea salt

 

Directions:

Peel the jicama, cucumber, pineapple and mango.

Cut them into 1/3” thick sticks (similar to the shape of a French fry).

Combine the cut pieces in a large bowl.

Sprinkle with salt, cayenne & paprika powder.

 

Salad Dressing:  Pour the lime juice & orange sauce in a bowl and whisk vigorously.

Add this dressing to the salad and refrigerate for a half hour.

Mint leaves and cilantro can be used as garnishments.
