Chutney Anyone?

Tomato-Onion, Pepper Chutney

Prep time – 10 mins, Cook time – 10 mins


Small Vine tomatoes – 8

Red pearl onions - 6

Mini Peppers – Yellow (2) & Orange (2)

Dried Red Chilies - 6

Tamarind Pulp- 1 tbsp.

Fresh cilantro leaves- 10

Vegetable Oil – 2 tbsp.

Salt – 2 tsp.

  1. Chop tomatoes, onions & mini-peppers into small pieces
  2. Heat oil in a pan
  3. Sauté red chilies, chopped onions & mini-peppers for about 2 to 3 minutes until the onions turn to golden brown color. Set aside
  4. Sauté chopped tomatoes for 2-3 minutes and set aside
  5. Add the sautéed veggies, red chilies and tamarind pulp into a blender & grind well for 2 minutes
  6. Pour this mixture into a serving bowl and add salt for taste
  7. Sprinkle few fresh cilantro leaves on top

Spread it on bruschetta, dip for pita breads, chips or nachos.
